Rebecca bakes a few loaves at a time — wild yeast, a long cold ferment, and a crust that sings when it comes out of the pot. This week she is opening with three: sourdough, chocolate sourdough, and chocolate sourdough with a pot of chocolate butter. First come, first served.

The crumb
Mixed at night. Baked in the morning.
A mature starter, bread flour, a little whole wheat, water, and salt. The dough rests, gets folded, then spends the night in the cold. In the morning it hits a covered pot until the crust is deep and the ear stands up.
That open, creamy crumb is the point — and the reason there are only so many loaves in a week.

Join the Saturday text. When the week is posted, reserve a loaf online — first come, first served.

She bakes Friday night into Saturday
Starter, folds, a long rest, then the pot. Loaves come out Saturday morning.

Cash or Venmo at the door. Exact address comes with your confirmation while the family settles a new kitchen.
